Berry Cheesecake Cups


Steps:

  1. Prepare the Biscuit Base:

    • Crush the Lotus Biscoff biscuits.
    • Melt the butter and mix it with the crushed biscuits.
    • Press the biscuit mixture into the bottom of dessert cups.
    • Bake in the oven at 150°C for 10 minutes.
    • Remove from the oven and let cool.
  2. Prepare the Cream Cheese Filling:

    • In a bowl, whisk the cream cheese until smooth.
    • Add powdered sugar and whisk until well combined.
    • Add whipped cream, lemon juice, and lemon zest.
    • Continue whisking until the mixture becomes thick and smooth.
  3. Assemble the Dessert Cups:

    • Transfer the cream cheese mixture to a piping bag and refrigerate for 10 minutes.
    • Spoon 2 tablespoons of the biscuit base into each dessert cup.
    • Pipe a layer of cream cheese filling over the biscuit base.
    • Top with fresh blueberries and strawberries.
  4. Chill and Serve:

    • Refrigerate the assembled dessert cups for at least 2 hours.
    • Remove from the fridge 20 minutes before serving to allow them to come to room temperature slightly.
    • Serve and enjoy your delicious Biscoff Berry Cheesecake Cups.
